Oat Pancakes

Oat Pancakes

Ingredients (serves 1)

1/2 cup rolled oats

1 TBS linseeds (flaxseeds)

1 TBS chopped walnuts

1 tsp chia seeds

1 tsp raw cacao

1 tsp pure maple syrup

1/4 tsp ground cinnamon

1 medium ripe banana

1/2 cup blueberries

1 cup filtered water

Method

Blend oats, linseeds, chia seeds, cinnamon, cacao and water until smooth. Allow to sit 5 to 10 minutes to thicken.

Spoon 1/5th of the batter into a medium-hot, non-stick pan and spread with the back of the spoon.

Cook until golden brown, then flip and cook the other side. Place pancake on a plate and layer with blueberries, walnuts and bananas until all five pancakes have been made and layered. Top with the remaining fruit and nuts then drizzle with maple. Enjoy 😊

Raw Peanut + Oat Cookies

Raw Peanut + Oat Cookies

Something to satisfy the sweet tooth in all of us – Raw Peanut + Oat Cookies.

These cookies are packed full of protein from the peanuts and chia seeds, and loaded with fibre from the oats.

They can be stored in the fridge for up to a week. Enjoy 🙂


Ingredients (makes about 12 cookies)

1 cup natural peanut butter (no added sugar or oils, preferably raw)
1 1/2 cups rolled oats
2 Tbsp chia seeds
1/4 cup pure maple syrup

Method

Warm the peanut butter and maple syrup in a large saucepan. When liquid, add the oats and chia seeds and mix well. Allow to cool slightly then shape spoonfuls of mixture into 12 cookies around 1cm thick. Place each cookie onto a baking tray lined with baking paper and allow to cool and set in the fridge for at least an hour before serving  

NOTE: these cookies can also be baked in a 180 degree Celsius oven for 10-12 minutes.  Baking results in a crunchier, slightly drier cookie.

1 large frozen banana (chopped)
2 Tbsp frozen blueberries (+ some for topping)

1 tsp raw cacao
1 tsp pure maple syrup

 

Method

Blend all ingredients together until smooth. Serve immediately, topped with frozen berries
