Kale + Mushrooms

This is a simple and delicious way to get those greens into your daily diet – garlicky Kale + Mushrooms, with a hint of lemon! 😋
This recipe serves one as a snack or as the base of a yummy lunch – just add some white beans or chickpeas, or pile on top of a baked sweet potato. It also makes enough for two as a healthy side dish.
Greens for today… ✔️
Ingredients (serves 1-2)
5 or 6 stalks of curly kale (about 60 grams)
5 or 6 mushrooms (any kind!)
2 cloves fresh garlic
1 tsp fresh lemon juice
fresh black pepper
Method
Slice the mushrooms, then saute in a medium-hot pan until some of the moisture starts coming out. Roughly chop the kale and add to the mushrooms. If needed, add a little water to keep from burning.
Mince or chop the garlic and add it just before the kale is cooked through – you want the kale to be softened but not grey and soggy!
Serve drizzled with lemon juice and freshly cracked black pepper. Enjoy 😊
